Mists & Mellow Fruitfulness

If you haven’t already heard, there is a dust cloud at the centre of the Milky Way that tastes of raspberries and smells like rum. Brilliant! And it got me thinking; the galaxy is a bit like a trifle, choc-full of different elements which combine to make something amazing, something full of potential.

I’ve never met a trifle I didn’t like (which is probably why it doesn’t take a huge imaginative leap for me to go Galaxy! Trifle! Awesome!). It’s one of those fantastic desserts that can be really simple (using shop bought ingredients) or a bit more involved (making the cake and custard from scratch). I went for individual serves and they’re about as simple as you can get.


So here it is, my Galaxy-inspired trifle: First, put some sponge cake at the bottom of a glass. Now, this is important, whether you’re doing a massive bowl or individual serves, it has to be served in cut-glass, or it’s not a proper trifle. That’s the rules. Anyway, a splish of rum over the cake, then let it soak in for a few minutes. Top with custard, raspberries and dark chocolate. Then pop it in the fridge for at least a couple of hours, preferably overnight. Done and done.

For a proper recipe, I think this one looks pretty good. Whatever the recipe, I recommend sitting outside to eat it, no distractions, just you, the trifle and the sky.
